Recipe: Carnitas

One of my favorite meats is carnitas. It is a seasoned pork shoulder that is shredded or cubed depending on your preference. I personally loved it shredded on top of tacos or burrito bowls or salads or in eggs. I love carnitas. I only ever get them when I am out at a restaurant, so I decided it was time to try my own hand at making carnitas. I found a slow cooker recipe and decided to give it a go. It was a ten hour process and so I definitely needed to do it on a day off.
So here it is!

Ingredients:
1 tsp Salt
1 tsp Garlic Powder
1 tsp Cumin
1/2 tsp oregano
1/2 tsp Coriander
4lbs Pork Shoulder Roast
2 bay leaves
2 cups of chicken broth

You put all of this together in the crock pot and cook for ten hours. Yeah, a long time! You turn it over half way through so that all of it gets cooked thoroughly. Word of caution, open up the windows or doors because otherwise you are going to be hungry all day because the smell is to die for!
The other thing is, if there is only two of you, then stick to the four pounds. TJ accidentally picked up an eight pound should roast. Dude, we have a ton of carnitas! We are eating it in everything imaginable!

So, this is the raw shoulder roast with the rub on it! Yum!


And here we are in the crockpot with half the juice in there. It did not take long for the smell to start wafting through the house!


And the finished product. You honestly have no idea how delicious that was! Oh yum! Yum yum yum!!!!
